Some of you may have seen on the whiteboard at one fateful Dojo quotes and drawings from the timeless movies of Back To The Future! You see, Laura and I had a Back To The Future marathon at our house one night, and Chelsea, Christina and many others tagged along to basically gorge ourselves on snacks etc.
Now our friend Mark was coming too, and he was running suspiciously late and we were all wondering why...however when he arrived, we instantly forgave him because he brought brownies. But not just any brownies. He brought the PERFECT brownies. They must have been made with extra love, because every one of us instantly fell in love with these brownies!!! They were soft in the middle and had exactly the right amount of crispyness on top. They were still warm from the oven and tasted DELICIOUS! If you have a look on Facebook, Annalese even made a "Mark Saxton's Official Baking Fan Club"! I was even lucky enough to gain the recipe...I made it for my english class, and high praise was made for them all around! From every single person! In fact, these brownies were so good (sorry for rambling), I put the recipe on here for everyone to try at home. And if you're really nice, Mark may even bake more...
Mark's Indulgent Chocolate Fudge Brownie!!
200g butter, melted
3/4 cup cocoa
2 cups caster sugar
1/4 tsp salt
4 eggs
1 tsp vanilla essence
3/4 cups flour
1/2 tsp baking powder
2 cups chopped chocolate/chocolate chips.
Preheat oven to 150C. Spray a 20X30 sponge-roll tin with non-stick baking spray and line with non-stick paper. Mix melted butter, cocoa, sugar, salt, eggs and vanilla essence until well-combined, beating until the colour lightens (about 4-5 mins). Gently mix in flour, baking powder and chopped chocolate. Pour into the prepared tin and bake for 50-55 mins. The brownie should still be quite soft in the middle, but will have cracked slightly and pulled away from the edge of the tin. Cool completely in the tin. Cut when cold and store in an airtight container.
Makes 18 pieces.
